I believe we are called salt of the earth because:
1st Jesus is telling us, we have great value to both him and mankind, just as salt did.
2nd He is telling us by living for him and displaying a God like attitude we can preserve others from corruption. Additionally we can bring our the goodness just as salt brings out flavor.
I believe that losing saltiness is when we fail to live out the attitudes, or any of "perfect character set" as described earlier in the chapter. When we fall short the question being asked is, if not us then who will season mankind with a God-like flavor. For when we don't live outwardly for God we fail to show others his grace and they lose the chance to become 'salted' with a God-like attitude.
